This massive tuna head was given an inspection tour of diners at Cignale Enoteca. This was, we agreed, one of the greatest meals we’ve ever eaten. Chef Timori’s restaurant is basically a beautiful candle-lit open-kitchen, where you are seated with a handful of other diners. Before the meal, the chef gave us a presentation of all raw ingredients, but the tuna head was the biggest surprise.
